Should have...

I should have included this receipe on the post with the cookies. Alas I am very slow, however here it is not too far behind the post! Scroll down a bit to see the pics. These are by far the yummiest chocolate chip I have found so far!

Chocolate Chip Cookies (from Incredible Edible Gluten-free Food for Kids)

Ingredients
½ c butter
½ c shortening
¾ c packed brown sugar
¾ c sugar
2 eggs
1 tsp pure vanilla
2 tsp baking powder
2 c rice flour
¾ c tapioca flour
½ c potato starch flour
1 tsp xanthan gum
1 tsp salt
2 c chocolate chips
1 c nuts (opt)

Directions
1. In a mixing bowl, beat the shortening and butter with a mixer on medium speed for about 30 sec
2. Add brown sugar, sugar, eggs, vanilla, baking powder, and rice flour. Beat until creamy and thoroughly combined.
3. Beat in the tapioca flour, potato starch, xanthan gum, and salt.
4. With a spoon, stir in the chocolate chips and nuts
5. Drop by teaspoonfuls about 2 in. apart on an ungreased cookie sheet. Bake in a 375-degree oven for 9-12 min. or until the edges are lightly browned. Remove immediately and place on wire rack to cool. Store in a plastic zip-style bag or airtight container.

I picked up this cookbook today at the library. Which bread recipe do you guys use? I have yet to find a really good GF bread recipe. Wesley would love some PB&J sandwiches if I can find a good recipe. :-)

Liz the one that is for white bread and says that the author's son likes this kind. I think it is called White Bread...good luck
